Many of my meals are braised or “stewed” dishes. My reasons are, first that many of you simply do not have time for “low & slow” cooking. These dishes can be frozen & reheated without compromising their quality, & actually improve with a little age. Braises generally use less expensive cuts of meat & those savings I can pass on to my wonderful clients. And the flavor combinations are simply endless resulting in highly flavorful, delicious & hearty meals for you & your family.
Creating low-fat dishes is also important to me so I braise my stews one day ahead and de-fat them before delivering them to your door. I prepare my chicken dishes without the skin on to create a lower-calorie version and yet, I won't compromise quality with my croissants, quiche crusts or cookies that are made with unsalted butter and are NOT low-fat. No trans fats or hydrogenated oils here!
